What should a good souffle taste/look like?
about half an hr ago i made chocolate souffles but i've actually never had a souffle before until tonight. so when i noticed that the souffle was still gooey in the center i thought maybe it needed to be in the oven for longer. maybe i did not do a good job because i did not know what to expect from a souffle. i liked the texture overall but i did not like the gooey parts in the center. it just did not taste done to me. the souffle was puffy looking while it was still in the oven but once i took it out it started to deflate. did i do anything wrong? i've heard that souffles are supposed to be very delicious but after tonight, i'm not so sure. i'm left with the impression that i dont need to have another souffle in the future...or maybe i just dont like souffles? i mean i dont like creme brulee. what should a good souffle taste/look like? thanks!
the souffle should be partly gooey in the centre. this give a very interesting contrast to the cooked part. but if you dont like gooey bits, cook a littkle longer
about the taste part: generally all souffles shouldnt be too sweet and there should be less than a third of a cup of sugar in a recipe for 4 servings. fruit souffles should be delicate in flavor so dont put too much fruit juice or puree. however with chocolate based souffle, you want to use dark chocolate and no cocoa powder. this gives excellent richness without giving a grainy texture.
another thing, souffles should not taste too eggy or too cake-like and should be as light as possible (try not lose too much air from the egg whites).

this can be achieved by not having an overly thick batter, and by greasing the dish liberally with cooking spray or butter. you should also take into account that you must resist the tempatation to open the oven door untill the souffles are done. single serve souffles take about 15 to 20 minutes to cook. remember: souffles deflate immediately after cooking, so eat them quick!!
